Chef Devin Dedier of Vacanza Romana is the the culinary driving force behind its Roman-inspired kitchen. His approach to Italian cooking is grounded in discipline, sourcing, and respect for tradition — believing that the best food comes from restraint rather than excess.

Under Devin’s leadership, Vacanza Romana operates as a 100% scratch kitchen. Pasta is rolled by hand daily, dough is fermented in-house, and the majority of ingredients are sourced directly from Italy, complemented by seasonal produce from local farmers throughout the year. The result is Italian cuisine that feels honest, intentional, and rooted in place.

Devin’s work has earned recognition throughout the region, including multiple Best Chef awards in El Dorado Hills and Folsom, Young Entrepreneur of the Year, and selection as a Sacramento 40 Under 40 recipient. In 2025, he headlined the Tower Bridge Dinner and served on the culinary team for Terra Madre America, reflecting a commitment to food culture beyond the restaurant.
